Evelyn Castillo, 66, of Fertile, MN, died on Monday, October 26, 2015, at the Riverview Hospital, Crookston, MN.
She was born on May 25, 1949, to Rufino and Margarita (Garcia) Castillo in San Salvador, El Salvador. She attended a Roman Catholic Boarding School, El Col. La Divina Providencia and graduated from college with a Masters Degree in International Relations from La Universidad De Las Americas in 1978.
Evelyn was united in marriage to Pasha Shamlou in Mexico. She worked for the El Salvadorian Embassy in Lima, Peru, as an executive secretary. Over the years, she and her family lived in El Salvador, Mexico and Canada, before settling in the Crookston, MN. Due to health concerns, Evelyn entered the Fair Meadow Nursing Home, Fertile, MN, in 2011.
In her younger years, Evelyn enjoyed spending time with her beloved father, whom she loved dearly. She spoke of times she went horseback riding with her father through his coffee plantations, and the times where he visited her in boarding school bringing her gifts of dolls and nice chocolates. Her father sadly passed away of a heart attack when she was 25 years of age. Evelyn enjoyed each chance she got to see horses, take long walks in the country side, picking flowers, and gardening; it reminded her so much of her childhood.
Evelyn was a quiet and reserved person who appreciated good books, writing, painting and coloring, as well as watching movies on television. She was an intelligent and well educated lady. She possessed a contagious smile and an entertaining sense of humor. Evelyn was a woman of faith who enjoyed praying daily. She was an excellent cook, specializing in Middle Eastern, German, and French cuisine. Languages came easy to her as she spoke five different languages.
Evelyn's face glowed at the sight of her grandchildren whom she adored. She loved to go on outings with her daughter Afruzeh and son-in-law Brandon to visit her beloved James. When she spent time with James in person or through Facetime video, her true joy showed though her constant smiling. She loved being called Granny. She was loved, will be missed, and will forever be in our hearts.
Evelyn is survived by two daughters: Afsaneh (John) Rothchild, Woodbury, MN, and Afruzeh (Brandon) Jacobson, West Fargo, ND; five grandchildren: Giada, Wellington, Soraya Rothchild and James and Gemma Jacobson. She was preceded in death by her parents and one son, Billy Castillo.
